This salad is great with chicken as well, can be served as a side dish for a barbecue. Family loved it so much, that all they ate for days was turkey egg salad sandwiches, and they normally hate eating leftovers.
Ingredients: 1 1/2 cup mayonnaise
6 hard-cooked eggs, chopped
1/2 cup pickled cucumbers chopped
1/2 cup finely choped celery
6 fresh spring onions, chopped, or one small red onion, chopped
6 cups leftover cooked dark and white meat turkey, chopped/or chicken
1 tablespoon celery seed
Salt, black pepper
Directions: Mix eggs, mayonnaise, celery, onion, pickles and celery seed in a large bowl. Gently stir in turkey. Cover and refrigerate at least 1 hour before serving.
Note: this recipe can be prepared the day before. Stir gently just before serving.
