This delicious mayonnaise made from tofu is a cholesterol-free alternative to traditional mayonnaise.
Ingredients: 250 g tofu
1 teaspoon Dijon mustard
3 tablespoons cider vinegar
125 mL olive oil
freshly ground black pepper
Directions: 1. Place tofu, mustard and 1 tablespoon vinegar in a food processor or blender and process until smooth.
2. With machine running, slowly add 2 tablespoons oil then 1 tablespoon vinegar. Continue in this way until all the oil and vinegar are used. Season to taste with black pepper.
