Ingredients: 1 kg fresh spinach leaves
1/4 cup olive oil
1 onion, chopped
2 cloves garlic, chopped
Freshly ground black pepper
Juice of 1 lemon
4 tablespoons lightly toasted pine nuts
Directions: 1. Wash the spinach thoroughly under the running water.
2. Bring water to boil in a large saucepan, add 2 tablespoons of salt. Place the spinach into the pan and blanch for exactly 1 minute. Sieve and wash with planty of cold water, ( or transfer it immediately to a large bowl of icy water and then sieve)
3. n a large frying pan heat the oil and saute the onion and the garlic , stirring, for 3 minutes. Add the spinach leaves, salt, pepper and saute for additional 2 minutes.
4. Add the lemon juice and cook for another minute. Sprinkle with pine nuts and serve.
