Directions: 1. Place flour, ground ginger, mixed spice, cinnamon and bicarbonate of soda in a large mixing bowl. Rub in butter, until mixture resembles fine breadcrumbs. stir in sugar, golden syrup, and glace or stem ginger.
2. Turn dough onto a lightly floured surface and knead to form a soft dough. Roll rounded teaspoons of mixture into balls and place 3 cm in apart on greased baking trays. Bake for 10-15 minutes at 180 degrees C, or until golden. Transfer biscuits to wire racks to cool.
