Ginger lovers won't be able to get enough of these spicy cookies.
Ingredients: 125g flour, sifted
1/4 teaspoon ground ginger
1/4 teaspoon ground mixed spice
1/4 teaspoon ground cinnamon
1/2 teaspoon bicarbonate of soda
60g butter, cut into pieces
90g brown sugar
2 1/2 tablespoon golden syrup, wormed
1 1/2 tablespoon finely chopped glace ginger or stem ginger in syrup
Directions: 1. Place flour, ground ginger, mixed spice, cinnamon and bicarbonate of soda in a large mixing bowl. Rub in butter, until mixture resembles fine breadcrumbs. stir in sugar, golden syrup, and glace or stem ginger.
2. Turn dough onto a lightly floured surface and knead to form a soft dough. Roll rounded teaspoons of mixture into balls and place 3 cm in apart on greased baking trays. Bake for 10-15 minutes at 180 degrees C, or until golden. Transfer biscuits to wire racks to cool.
