Ingredients: 1 kg of pork spare ribs stripes cut into medium cubes
2 garlic cloves diced finely
juice of two oranges
1 tablespoon of honey
1 tablespoon of tamarhind sauce
1 tablespoon of hot and sweet chilli sauce
1 tablespoon of hot mango sauce
fillets of an orange
diced spring onions (green part only)
Directions: heat a very big and heavy pan. put the spare ribs in the hot pan and fry until golden brown. get it out of the pan and set aside.
get rid of the fat in the pan but dont clean it. leave the pan oiled. fry the grlic a bit (half a minute) and add the orange juice. add the rest (except the orange fillets and the spring onions) and stir well. put back the ribs in the pan and cook it for seven minutes.
for presentation: put a pile of spare ribs in the center of the plate. pour a bit of sauce on it. garnish with orange fillets and spring onions.
