Directions: 1. Whisk oil, lemon juice and lemon peel in a small bowl to blend. Season dressing with salt and pepper.
2. Place 1/2 of dressind in a large bowl. Mix in green pepper, onion, cilantro, basil and mint.
3. Cook potatoes in a large pot of boiling salty water until tender, about 25 minutes. Drain; cool 15 minutes. Cut potatoes into 1 cm squares, add to the bowl with dressing and mix to blend. Let stand for 10 minutes to infuse flavours. Season with salt and pepper, adding more dressing if desired.
