A sweet, fruit-flavoured chicken very easily made. Fantastic with white rice!
Ingredients: 1kg skinless chicken pieces
1/2 cup light soy sauce (unsweetened)
1/2 cup plum jam
1/4 cup honey
1/4 cup orange juice
2 cloves garlic, peeled
Freshly ground black pepper
Directions: 1. Preheat the ovento 180 degrees C. Combine soy sauce, plum jam, honey, orange juice, garlic cloves, salt and pepper in a bowl. Pour 1/3 to the bottom of a shallow, foiedl baking pan.
2. Arrange chicken in pan and pour the remaining sauce over. Cover with foil and bake for 25 minutes. Remove foil, turn pieces over and bake uncovered 30 minutes longer, basting occasionally with the sauce .
