Instructions
  1. The tang of lime and the unique flavour and texture of coconut combine to make these wonderful cookies.
  2. Ingredients: 125g butter, chopped 170g brown sugar 1 teaspoon vanilla essence 1 egg 125g flour 60g self-rising flour 90g rolled oats 45g disiccated coconut 2 teaspoons finely grated lime rind 2 tb sp. lime juice
  3. Directions: Place butter, sugar, vanilla essence, egg, flour and self-rising flour, rolled oats, coconut, lime rind and lime juice in a food processor and process until well combined. Place heaped spoonfuls of mixture on greased baking trays and bake for 12-15 minutes or until lightly browned. Cool on wire racks.
