Instructions
  1. Very unusual and extremly tasty pizza with a meat base instead of a traditional dough. Slight variatioms can be made with the topping, like adding more cheese or different kinds of vegetables... Cab be qualified as a meat pie as well.
  2. Ingredients: 185g cracked wheat, soaked im 500mL hot water for 15 - 20 min 1 onion, chopped 1 clove garlic, crushed 500gr lean lamb mince 1/2 teaspoon mixed herbs 1 tb sp. lemon juice 1 tb sp. chopped fresh mint 1/2 teaspoon chilli powder TOMATO AND HUMMUS TOPPING 250gr hummus 2 tomatoes, sliced 9 spinach leaves, blunch and chopped 3 tb sp. pine nuts 4 tb sp. grated mature cheddar
  3. Directions: Drain cracked wheat and set aside. Cook onion and garlic in a non-stick frying pan for 3 minutes, or until the onion is soft. Transfer cracked wheat and onion mixture to a bowl and combine with lamb, herbs, lemon juice, mint and chilli powder. Press meat mixture into a 30cm/12 in pizza tray and cook for 20 minutes, or until base is firm. Drain off any juices. To make topping, spread meat pizza base with hummus then top with tomato slices and spinach. Sprinkle with pine nuts and cheese. Cook under preheated grill for 3-4 minutes or until cheese melts. Serving suggestion: cut pizza into wedges and serve with crusty bread and a salad
