Ingredients: 2 small bunches fresh basil
3 spring onions, finely chopped
2 cloves garlic, crushed
1 tb sp. capers, drained and rinsed
155mL olive oil
1 tb sp. lemon juice
freshly ground black pepper
Directions: Place basil leaves, spring onions, garlic and capers in a food processor or blender and process until smooth. With machine running, slowly pour in oil, then lemon juice, and continue to process until well blended. Season to taste with black pepper.
