Instructions
  1. Very refreshing, tasty salad, best served on hot summmer days...
  2. Ingredients: 2 Granny Smith apples, cored and sliced 1 tablespoon lime or lemon juice 6 lettuce leaves 1/2 of a small honey melon, peeled, halved crosswise, seedes and sliced 1 cup halved seedless green or red grapes 1/2 cup pistachio nuts or silvered almonds (opt) CREAMY HONEY-LIME SALAD DRESSING 1 carton plain yogurt 2 tablespoons honey 1/2 teaspoons finely shredded lemon peel 2 tablespoons lime or lemon juice
  3. Directions: 1. Divide the leaf letttuce among the 6 salad plates. Arrange the apples and honeydew slices on the lettuce; place the grapes in clusters next to melon and apple arrangments. 2. To make the dressing, in a mixing bowl combine the yogurt, honey, lemon peel and lemon juice. Mix well. 3. Spoon the dressing on top of fruits. Sprinkle with nuts. Note: if you can't find any melon in your grocery store during winter, you can substitude another fresh fruit.
