Ingredients: 750gr. boneless stewing lamb or beef
1 large onion, finely chopped
1/3 cup regular oil
1 teaspoon turmeric
1/5 cup water
1/2 cup dried lime or fresh lime juice
3/4 cup black-eyed beans, or kidney beans, presoaked
1 large potato, diced (opt.)
Salt, black pepper
1 cup spring onions, finely chopped
1/5 cup spinach, finely chopped
1/2 cup parsley, finely chopped
1/4 cup corriander, finely chopped
1/4 cup garlic chives- tareh, finely chopped
1/4 cup fenugreek, finely chopped (opt.)
Directions: Trim the meat and cut into 2cm cubes.
Heat 1/2 portion of the oil and fry the onion over the medium heat until golden. Add turmeric and fry for additional 2 minutes. Increase the heat, add meat cubes and fry over high heat until meat begins to turn brown. Reduce flames.
Add water, beans, salt and pepper to taste. Cover and simmer gently for 1 - 1/5 hours, or till the meat is tender (the time depends on the type of the meat used).
Fry potato over high heat in the remaining oil until lightly browned. Add to the stew and cook for 10 minutes.
Place the prepared herbs to a frying pan and fry briskly until wilted.
Transfer to the stew, then add dryed limes or the lemon juice. Cover and simmer for further 10 - 15 min. Adjust the seasoning .
Serve with white rice. Highly reccomended!
