When I go on diet, this salad is one of my first choices, so healthy and tasty...
Ingredients: 1 lettuce, leaves separated and torn into pieces
12 cherry tomatoes or tomato wedges
4 hard-boiled eggs cut into wedges
12 button mushrooms, sliced
60g mangetout (snow peas) or sugar snap peas
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil
1 tablespoon pine nuts, toasted
Croutons (see recipe)
90g natural yogurt
1 clove garlic, crushed
1 tablespoon white wine vinegar
1 tablespoon snipped fresh chives
freshly ground black pepper
Directions: 1. Arrange lettuce, tomatoes, eggs, mushrooms and mangetout (snow peas) or sugar snap peas on a serving plate. Sprinkle with parsley, basil, pine nuts and croutons.
2. To make dressing, place yogurt, garlic, vinegar, chives, and black pepper to taste in a bowl and whisk to combine. Spoon a dressing over the salad and serve immediately.
CROUTONS: to make croutons, cut crusts from a slice of bread, then lightly brush slice with oil and cut into cubes. Place cubes on baking tray and bake at 200 degrees C for 10-15 minutes or until croutons are golden and crisp.
