Very imposing and tasty egg salad. Great in sandwiches too.
Ingredients: Lettuce leaves
4 hard - boiled eggs, quartered
12 cherry tomatoes
1 avocado, stoned, peeled and sliced
24 black olives
Fresh herb dressing:
250gr. natural yogurt
2 tb.sp. chopped fresh parsley
1 tb.sp. chopped fresh mint
1 tb.sp. snipped fresh chives
2 tb.sp. apple juice
Freshly ground black pepper
Directions: To make dressing, place yogurt, parsley, mint, chives and apple juice in a food processor or blender, and process until the dressing is well combined and green in colour. Season to taste with salt and black pepper.
Arrange lettuce leaves, egs, tomatoes, avocado slices and olives attractively on a serving platter and just prior to serving spoon over dressing.
