Round out your meal with this scrumptious, law-fat side dish. The sweet potatoes provide an excellent source of vitamin A.
Ingredients: 4 cups cooked fresh mashed sweet potatoes
1 container pineapple or vanilla yogurt
1/4 cup firmly packed brown sugar
1/4 cup milk
1 cup crunchy whole grain cereal
1/4 cup pecans, chopped
Directions: Mix potatoes, yogurt, brown sugar and milk until well blended. Spoon into 8-inch square pan.
Mix cereal with chopped pecans and sprinkle over the potato mixture.
Bake at 180 degrees C for 45 minutes.
