Instructions
  1. Super-healthy dish, using virtually no oil and very tasty, too!
  2. Ingredients: 2 tablespoons light soy sauce 1 tablespoon sesame oil 3/4 teaspoon fresh ginger root, grated 3 tablespoons rice vinegar 1/4 cup + 2 tablespoons orange juice 3/4 teaspoon orange rind, grated 750 g cod fillets or white fish fillets, rinsed in cold water 1 1/2 cups mushrooms, cooked, sliced 4 scallions, cut into 2.5 cm pieces 1 1/2 cups snow peas, cooked, cut into 2.5 cm pieces 1 1/2 cups carrots, cooked, sliced
  3. Directions: 1. Combine soy sauce, sesame oil, grated ginger, rice vinegar, orange juice and orange zest in a nonreactive bowl. Marinate for 30 minutes. 2. Drain the marinade and transfer to a small saucepan. Bring to simmer over medium-high heat and set aside. 3. Arrange fish fillets over steaming tray. Place tray over boiling water, cover and steam for 2 minutes. Add mushrooms, scallions, snow peas and carrots and steam for additional 5 minutes until fish flakes easily and the vegetables are crisp-tender. Pour sauce over individual portions just before serving.
