A tasty accompaniment to various dishes, may be turned into a wonderfull quick soup as well.
Ingredients: 185gr/6oz dried chick peas
300mL/9 1/2fl oz olive oil
6 cloves garlic, crushed
freshly ground black pepper
3 tbsp. lemon juice
3 tb sp. chopped fresh parsley
Directions: Place chick peas in a small saucepan and cover with water. Bring to boil, then turn off heat, cover and soak for 1 hour. Drain and cover with fresh cold water. Cover the pan and cook over low heat for 2 - 3 hours or until chick peas are tender. Drain well.
Heat oil in a frying pan, add garlic and chick peas and cook, stirring constantly, until chick peas are lightly browned. Season to taste with black pepper and mix in lemon juice and parsley. Pack into a warm sterilised jar, seal and refrigerate until required.
