Cheese pastry makes a tasty pastry for savoury pies. Omit the mustard and pepper and thid pastry is perfect with apples and pears
Ingredients: 90g grated mature Cheddar
1 1/2 teaspoon dry mustard
1/2 teaspoon cayenne pepper
250g flour, sifted
185 g butter, chilled and cut into small cubes
1 egg yolk,lightly beaten
3-4 tb sp. chilled water
Directions: Place cheese, mustard, cayenne pepper and flour in a bowl and mix to combine. Rub butter in, using your fingertips until mixture resembles coarse breadcrumbs.
Mix in egg yolk and enough water to form a soft dough with a metal spatula or round-ended knife.
Turn dough onto a lightly floured surface bd knead gently until smooth.
Wrap in plastic food wrap and refrigerate for 30 minutes. Roll out and used as desired.
