Directions: Preheat the oven to 180 degree C. Line the oven tin. -28/23 with a baking paper.
Place the flour, cinnamon, baking powder and 1/2 teaspoon salt to a large bowl. In a seperate bowl whisk well together the eggs, oil and sugar. Add the dry ingredients gradually to egg mixture and stir until smooth batter is formed.
Add the grated carrots to the batter. Pour into tin and bake for 50-60 minutes, or until the toothpick inserted in the middle of the cake comes out dry. Rest for 5 minutes before removing from the tin. Serve as it is, or sprinkle with icing sugar.
