Instructions
  1. A very simple and tasty cake to make. Sprinkle some powdered sugar on it, or spread it with white cheese, it will make it reacher.
  2. Ingredients: 250g regular flour 2 teaspoons baking powder 2 teaspoons ground cinnamon 250mL oil 250g sugar 3 eggs 300g fresh carrots, grated Icing sugar VARIATION 120g chopped walnuts, or 100g raisins, or 175f pineapple cubes
  3. Directions: Preheat the oven to 180 degree C. Line the oven tin. -28/23 with a baking paper. Place the flour, cinnamon, baking powder and 1/2 teaspoon salt to a large bowl. In a seperate bowl whisk well together the eggs, oil and sugar. Add the dry ingredients gradually to egg mixture and stir until smooth batter is formed. Add the grated carrots to the batter. Pour into tin and bake for 50-60 minutes, or until the toothpick inserted in the middle of the cake comes out dry. Rest for 5 minutes before removing from the tin. Serve as it is, or sprinkle with icing sugar.
