melt the butter in a wok. add the shrimps and stir-fry until they are turning pink. remove the shrimps into a strainer. wipe up the wok and put back on the stove (fire, whatever). add the cocnut milk, mango, heavy cream and chilli and cook for 5 minutes. add salt and pepper if needed. add the shrimps, stir well and remove from heat. deep fry the leek and put on a blotting paper.
for presantation put the shrimps in the center of a plate. put the sauce around and on the shrimps. decorate with the fried leek and the spring onion stripes.
