Avocado and Chicken on Pumpernickel

Instructions
  1. A sensational snack.
  2. Ingredients: 1 large avocado, stoned and peeled juice 1 lemon 4 slices pumpernickel bread 155 g watercress fresh mint sprigs for garnish CHICKEN SALAD 300 g cooked chicken, chopped 2 spring onions, finely chopped 1 tablespoon pine nuts 1 tablespoon finely chopped fresh mint 2 tablespoons mayonnaise
  3. Directions: 1. Cut avocado into 12 slices and sprinkle with lemon juice. 2. To make chicken salad, combine chicken, spring onions, pine nuts, mint and mayonnaise in a bowl. 3. Divide watercress between bread slices and top with chicken salad. Arrange three avocado slices on top of chicken salad and garnish with mint sprigs.
