170 g very fresh soft white bread, crusts removed
170 g Grana Padano chees, grated
1/2 cup milk
4 eggs
85 g stracchino (diced) or mascarpone cheese
Pinch of freshly ground nutmeg
Pinch of sea salt
1 tbsp minced parsley
All-purpose flour

Directions
Soak the bread in the milk. Squeeze the milk from the bread into another bowl and place in a mixing bowl. Work in the Grana Padano (best use your hands) and the diced stracchino or the mascarpone. Mix in 3 eggs, parsley, nutmeg and salt. Knead the cheese dough well, adding the reserved milk in batches. Set aside and let sit for 2 hours.
Form small 2 to 2.5-cm balls from the dough. In a small dish, lightly beat the remaining egg. Dip the balls in the egg and roll them in flour. Fry in very hot oil until golden-brown. Drain on absorbent paper before serving.
