With the exception of the salad dressing, there are no exact measurments for this salad. Experiment with portion sizes to come up with a version that you lile.
Ingredients
Fresh arugula
Fresh Mozzarella
English cucumber, thinly sliced
Red radishes, thinly sliced
2 small shallots, thinly sliced
Zest of 1/2 lemon
1/4 cup orange juice
1/3 cup olive oil
1 tbs honey
Salt and freshly ground black pepper
Directions
Combine the arugula, cucumber, radishes, shallots and Mozzarella in a salad bowl. In a small bowl, combine the lemon zest, orange juice, olive oil, honey, salt and pepper; shake well. Pour over the salad and toss to combine. Allow to stand for 10 minutes for flavors to develop before serving.
These cubes of tofu can be added to stir-fries, fried rice or noodle dishes. They can also be scatterd into salads or soups, used in a sushi roll or rice paper roll, or even eaten hot as an appetizer, or cold as a snack.
