1 package rice vermicelli, soaked until soft in hot water and drained
zest and juice of 2 limes
1/4 cup of peanut butter
1/4 cup of marmelade
1 tablespoon soy sauce
dash of hot sauce
2 tablespoons olive oil
3 green onions, sliced
1 cup cilantro leaves, chopped
1 carrot, peeled and shredded
1 cup of toasted peanuts
Directions
1. To make the dressing whisk together lime zest and juice, peanut butter, marmelade, soya sauce, olive oil and hot sauce until smooth.
2. Place the vermicelli, green onions, cilantro and carrots into a salad bowl and add dressing. Toss well and garnish with peanuts.
