For the people who hate veggetables, and especially cabbage, (like myself), this salad comes as a real pay-back... it's so tasty!
Ingredients
6 tb.spoons rice wine vinegar
6 tb.spoons vegetable oil
5 tb.spoons creamy peanut butter
3 tb.spoons soy sauce
3 tb.spoons brown sugar
2 tea spoons minced fresh ginger root
1 1/2 tb.spoon minced garlic
4 cups thinly sliced green cabbage
2 cups thinly sliced red cabbage
2 cups shredded napa cabbage, (opt.)
2 red peppers, thinly sliced
2 carrots, julienned
7 green onions, chopped
1/2 cup chopped fresh corriander
Salt to taste
Directions
In a medium bowl whisk together the rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger and garlic. In a large bowl mix all the vegetables. Toss with the dressing just before serving.
